This recipe was conceived through a hodge-podge of things I had laying around in my fridge and cabinets. It was super simple to make, and tasted REALLY great! I ate it FOR DAYS! Plus it’s super spicy! (Which I LOVE!)
Ingredients:
1 box of Spanish Rice (I used the Rice-A-Roni brand)
1 jar of tomatoes (I subbed this instead of the canned tomatoes it called for)
1 package of vegan/veggie Chorizo, sliced
1 green pepper, chopped
½ an onion, chopped
Olive oil
First, I got the rice started, because it takes the longest. I followed the recipe on the box, but substituted my own jarred tomatoes in lieu of canned tomatoes. This made it a big runnier than it would usually be, but not by much.
In a separate pan, I warmed olive oil on medium, and tossed in the Chorizo, green pepper and onion, and sautéed together. I cooked until the onions were almost clear, and the sausage was browned. Then, I put that on low, and set aside until the rice was almost done. If you are worried about overcooking the sausage, then take it off the heat. When the rice has about 5-1o minutes left, fold in the sausage mixture in with the rice, and let it absorb the spicy flavors, until the rice is done. Then eat!
This is a great meal to warm your insides on a cold winter day!

Cut up your sweet potato into small strips (like fries…duh). I leave the skin on, and chop. Then on a baking pan covered in foil, spread a little Extra Virgin Olive Oil (I use light) over the foil, and spread out your potato fries. I like to move them around and toss them IN the oil already on the foil. Then I sprinkle with seasoned salt, and some Italian herbs.
