I love when I stumble upon creating something totally different when going about making a meal. In this instance, I was hoping for a pita/sandwich thing, and ended up with more of a pizza! And I just loved the results!!! Loved Loved. So enjoy!
Ingredients:
1 package cubed, extra firm tofu
Splashes of Worcestershire sauce, soy sauce and steak sauce to taste
Sprinkling of Italian herbs
1 pita
a hummus spread (I used artichoke and garlic hummus)
a low fat, cheese spread (I used a low fat Alouette cheese)
Shredded Lettuce
1 small tomato, chopped
Cook the tofu in a pan, with the sauces until warmed, or lightly browned. I like to sprinkle the herbs on too, for extra flavor. I cook them on a medium heat,
and toss around until the cubs are all hot, and covered.
Then take your pita and spread on the hummus and cheese, then cut into sixths. Sprinkle with lettuce, tomato and then the cubes of tofu!
It’s that simple. And it is SO delicious and healthy! This is something great to make quickly, when you don’t have a lot of time, or need to throw something
together. The tofu can be made in advance and stored in the fridge as well.
